Makes 12 Portions

  • 100g (4oz) butter or margarine
  • 50g (2oz) brown sugar
  • 150 g (6oz) plain flour
  • 2 teaspoons baking powder
  • 2 teaspoons mixed spice
  • 1 egg - beaten
  • 100 g (4oz) glacé cherries
  • 100g (4oz) mixed peel
  • 50g (2oz) tinned pineapple
  • A little juice from tinned fruit to mix to a soft dough.

Method

Grease and line a 6″ cake tin. Cream margarine with sugar, then stir in the beaten egg. Mix the flour with the baking powder and mixed spice and fold in to the egg mix. Add the fruit and stir well.

Bake in a moderate oven (Gas 6/325°F/160°C) for approximately 90 mins. Ice the cake with butter icing or water icing if wished.

A little almond essence may also be added to the icing.
